Rustic Mustard

Brightly flavored with a characteristic mustard bite, this spread can be commonly found in small jars tucked up on cellar shelves amid other preserved goods. Its sharp flavor helps brighten meals during the long days of winter.

5 tablespoons mustard powder

1/2 cup packed brown sugar x teaspoon salt

1 cup heavy cream

1 tablespoon olive oil

2 tablespoons apple cider vinegar

 

method

Combine the mustard powder, brown sugar, and salt in a small saucepan over medium heat.

Add the cream bit by bit, stirring, until it turns into a nice pale mixture with an even consistency. Add the oil and vinegar, then cook for about 5 minutes, or until the mustard has thickened and the color has turned darker. The mustard will keep, covered, for several weeks in the refrigerator.
