1. Preheat the oven to 425°F /218°C. Clean and dry the yams, then prick them all over several times with a knife.
2. Place the yams directly on an oven rack placed in the middle position with a baking sheet on the rack below to catch any drippings. Bake for 45 to 60 minutes, or until you can easily pierce each yam with a knife. Remove from the oven.
3. Wrapping one yam at a time in a kitchen towel, cut a large X on the top of each and press on both ends of the yam to open the cuts. Top with as much Spiced Butter as you like, then sprinkle goat cheese and parsley over the top to finish.
